Dr. Metz pumpkin seed oil is cold pressed from unroasted and untreated pumpkin seeds of the Styrian oil pumpkin. This oil pumpkin, also known as medicinal pumpkin, is distinguished by its low amount of flesh and abundance of naked oil seeds.
Pumpkin seeds are traditionally crushed and fine milled with water and salt to form a pulp which is then roasted and pressed. Apart from the typical flavour, impurities can be formed and valuable substances lost.
To ensure the gentle extraction of pumpkin seed oil, the direct cold-press process is more suitable, even though the oil yield is lower.
The light green colour of pumpkin seed oil comes from the chlorophyll of the seed. The reddish shimmer is a result of the carotenoids in the pumpkin (also precursor of vitamin A) and is an indication of the gentle treatment as the carotenoids contained in pumpkins are particularly sensitive to heat. The oil from roasted seeds is always a dark green to brown colour.

Dr. Metz pumpkin seed oil is manufactured freshly on a regular basis. The pleasantly light taste of pumpkins goes well with salads, spicy sauces and cream cheese spreads.
